This condiment is a 100% natural product, obtained exclusively from short-bunch Tuscan Sangiovese grapes, which are handpicked from the vineyards in the Chianti region.
The heart of the process is the acetic fermentation. Carried out using a static surface method reminiscent of the Orleans method, it is very slow, does not stress the product and allows for the enhancement of specific aromas and flavors.
Vinification, must preparation and fermentations are constantly monitored and managed naturally. With the aim of obtaining a high-quality natural condiment that preserves the characteristics of the grapes from which it derives, no additives or preservatives of any kind are used.

Visual examination: intense and bright color with shades of golden yellow and amber. Smooth syrupy consistency.
Olfactory examination: rich and complex bouquet. Aromatic profile reminiscent of dried fruits, dates, preserves and honey, similar to typical Tuscan Vinsanto.
Taste examination: long persistence and perfect balance between sweetness and acidity with velvety nuances.
Aging: Method similar to the Solera system with a final phase in Vinsanto small caskets.
Recommended with: fruit, desserts, soft cheese.

Visual examination: ruby red color slightly tending to garnet, clear and bright.
Olfactory examination: complex with hints reminiscent of the characteristics of our Brunello. The aroma is intense and persistent with fruity and woody notes.
Taste examination: elegant and harmonious flavor with good aromatic persistence.
Aging: in barrels and small casks using a method similar to the Solera.
Recommended with: grilled meat, fish and vegetables; game.
